Our Sharpening or Honing steels are used for daily knife maintenance. They are designed to remove burs and put an edge on a dull knife and to get back some of its sharpness with minimal interruption to the job at hand. They are used to maintain and refine the edge of a knife after it has been sharpened, rather than for initial sharpening. They realign the microscopic edges of the blade, making it sharper and more efficient. So you can quickly and easily touch up your edge when needed and get back to work
